The race is on for the Fudgesicle. In the right corner you have the 8-month old; in the left is the 7-year old. Who will win?

The 7-year old enjoys her prize. No worries, the little one has a Fudgesicle waiting for her.

Fudgesicles
2 c coconut meat, 5-6 coconuts, meat works best with the gel consistency
1 c coconut water
½ c agave nectar
¼ c cacao nibs¼ t sea salt

With a coffee grinder, ground cacao nibs into powder. You should have about 1/2 cup cacao powder.

Liquefy ingredients in a blender. Pour mixture into 4 oz Popsicle molds. Leave about a ½-inch space at the top to allow for expansion.

Put in the freezer for 6 hours. Overnight is best.
