    Mixed Fruit Ice cream

    Nothing makes me happier than my lovely children eating and loving raw.

    Mixed Fruit Ice cream
    2 cups of your favorite frozen fruit
    1 ½ -2 cups almond milk
    1/16 teaspoon NuNaturals Stevia
    ¼ teaspoon NuNaturals Lo Han Extract

    Place frozen fruit in blender, add 1 ½ cup almond milk or more as needed until you reach a slightly slushy consistency. Blend in the stevia and Lo Han Extract. Serve immediately.

    Just for fun: Pour ice cream in 3 oz paper cups, place popsicle sticks in the center. Freeze for 4-8 hours until ice cream is frozen solid. Bishop made these for his class picnic.

  • "My Cereal"

    "My Cereal"

    This is a re-vamping of Bishop’s “My Cereal” He still prefers his dry but I enjoy mine with almond milk.

    Cinnamon- Raisin Buckwheat Cereal
    Makes 1-2 Quarts
    4 cups sprouted buckwheat groats (2 cups unsoaked)
    2 cups chopped soaked walnuts (1 cup whole walnuts)
    1 ½ cups raisins
    1 tablespoon cinnamon
    2 teaspoons vanilla extract
    ½ cup maple syrup (not a raw product)

    Toss buckwheat, walnuts and raisins in a large bowl. Add cinnamon, vanilla extract and maple syrup. Stir until well combined.

    Spread mixture evenly on 2-3 Teflex-lined dehydrator trays. Dehydrate at 115 degrees for 24-48 hours or until dry and crunchy. Serve with your favorite nut milk.

    Store in Mason Jars in the refrigerator. Keeps for 1 month.

    Today was suppose to be an enlighten discussion of sunchokes and how they effect the world's global positioning during the blue moon in July's monsoon season in Buck Grove, Iowa. It was an interesting topic, oh well, what I am posting now is much more important.

    Here is five things you should know about my son, Bishop.

    1. He loves trains.

    2. He was 11 pounds, 12 ounces at birth.

    3. He loves raw desserts.
    4. He is the sweetest boy I know, a gentle giant. 5. Today is Bishop's 5th Birthday.

    My husband came up with this granola that our son Bishop knows as "My Cereal". And since my husband developed this popular (at least in our household) recipe, I don't have any of the exacts. I was lucky one day to actually catch him playing with the ingredients. Most of the time he makes this when I'm not around. I don't understand why. ;)

    He runs and hides when he sees me flying at him with a pad, pencil and camera demanding to capture the moment.
    I know there is soaking, sprouting and dehydrating involved.

    Which leaves Bishop's favorite cereal with a sweet and nutty flavor and crunchy texture that holds its own in almond milk.
    Although, my boy prefers it dry. That's how I liked 'my cereal' when I was a kid. Now that I have the ingredients I will take some QT time and figure out the actually recipe. Maybe you can do the same.
