The catastrophe of being away from the raw kitchen for so long is all your neat tart pans and molds and other gadgets gets utilized as utensils in the kids’ sandbox. 'Want another sandy mud tart, mom? ' Now, I'm using an aluminum pie tin left over from Christmas. Instead of making Matt Samuelson's Coconut Lime Tarts, I ended up with a very delicious Lemon Coconut Pie. Thank heaven's for disgruntle three-year-olds.
Lemon Coconut PieCRUST2 cups almonds, soaked for 6-8 hours 1 cup dates, pitted and soaked for an hour, reserve soaking water 4 tablespoon reserved date water 2 teaspoon organic vanilla extract 1/4 teaspoon sea salt FILLING3 cups coconut meat (from 2-3 Thai coconuts) 1 1/2 cups coconut water 2 tablespoons coconut oil (liquid)juice of 1 large lemon1/4 cup agave nectar1 teaspoon organic vanilla extract1/8 teaspoon sea salt CRUST In a food processor, process almonds, dates, date water, vanilla extract and sea salt until well combined. Remove almond mixture and press mixture into a 9-inch pie pan. STRAWBERRY SAUCE Process strawberries and agave in a blender. FILLING Blend coconut meat, coconut water, oil, lemon juice, agave, vanilla and sea salt in a blender; process until smooth and creamy. Pour filling into crust. Chill in the refrigerator for two hours. Drizzle with strawberry sauce before serving.

Happy Trails Farm Animal Sanctuary volunteers handle a great deal of clean-up work, and should be physically able to handle manual labor projects. They may also be called upon to staff booths at various community events and to help pass out various literature. In addition, volunteers may help with hauling animals to and from vet visits and adoptive homes, serve as tour guides at the sanctuary, and participate in planning committees for fundraisers. The sushi and dipping sauce are my husband's creations. He brought home the pecan butter and his imagination went from there. We make and eat sushi once every few months. It's one of my favorite foods. It's a big deal when we make sushi because the work involved (food prep, rolling, sauce-making, etc.). We use a variation of the "Raw Food Real World" recipe with the jicama rice. Yummy! We save sushi night for when the kids are at a sitter and we can open a bottle of wine and crank up the music. Oddly enough, this wasn't one of THOSE nights. Note to self: Hungry husband generally doesn't like to have his sushi kidnapped to take a photograph for blog.
SUSHI ROLLS 4 nori sheets3 green scallions, thinly sliced1 cucumber, peeled, seeded and julienned1 red bell pepper, julienned1 ripe avocado, sliced1 small bunch sprouts 1. Place a nori sheet on a rolling mat. 2. Arrange small portions of the scallion, bell pepper, sprouts, cucumber and avocado on the bottom third of the nori sheet. 3. Roll up the sushi tightly with the sushi mat to form a neatly packed cylinder. Think fat cigar. 4. Cut each sushi roll into 1½-inch rounds using a sharp, damp knife. Plate and serve with Spicy Pecan Dipping Sauce.
SPICY PECAN DIPPING SAUCE1/2 cup Artisana Organic Raw Pecan Butter 1 garlic clove, minced 3 tablespoon agave nectar 2 tablespoon Nama Shoyu 2 tablespoon water 1/2 teaspoon sea salt1/4 teaspoon red pepper flakes,
1. In a blender puree together pecan butter, garlic, agave nectar, Nama Shoyu, water, red pepper flakes and sea salt until mixture is smooth. 2. If needed add more water one tablespoon at a time to reach a desired consistency.

Plums are a good source of vitamin C, assisting with absorption of iron.
SHORTCAKES1 cup oat groats, soaked overnight1 cup walnuts, unsoaked5 pitted Medjool dates, unsoaked1 vanilla bean, scraped or 2-3 teaspoon organic vanilla extract1/4 teaspoon sea salt 1 In a food processor, process walnut into a "flour". Remove from processor. Place oat groats, dates and vanilla in the processor and pulse until an oatmeal consistency. 2 Put oatmeal mixture in a large bowl, add walnut flour and sea salt. Combine well. Form dough into eight 2 1/2-inch diameter biscuits. 3 Place on teflex sheets. Dehydrate at 110 degrees for 2 hours. Flip over and dehydrate another one hour.
FRUIT6 ripes plums, halved, pitted, slicedJuice of one half lemon1/4 cup agave nectar1/2 teaspoon ground ginger1/8 teaspoon ground cinnamon1/8 teaspoon sea salt 1 Place plums, lemon juice, agave nectar and spices in a plastic container or Ziploc bag and marinate for at least an hour. Drain juice. PINE NUT CREAM1 cup pine nuts, soaked1/4 cup honey1/4 cup water1/8 teaspoon sea salt 1 Blend ingredients until smooth and creamy. Set aside. To assemble:1 Place a shortcake biscuit on a plate. 2 Spoon plum mixture over biscuit. 3 Spoon pine nut cream atop plum mixture. Spoon plum mixture atop pine nut cream. 4 Place biscuit top over plum mixture. Top with a dollop of pine cream and serve immediately.

In Raw History2009 105degrees Cafe hosts its first dinner service In Food History National Chocolate Milkshake Day This is Chocolate Milkshake recipe from The Daily Raw Blog's Almanac 2010Vanilla Ice Cream 2 cups Thai coconut meat 2 cups cashews, soaked for 1 hour to soften1 cup raw almond milk 1 cup raw agave nectar, light in color¼ cup coconut oil, (liquid) 2 tablespoons vanilla extract¼ teaspoon sea salt
Place ingredients in a blender and process until smooth, creamy consistency. Pour mixture into a deep dish, cover it and place in the freezer for at least 6 hours. Overnight is best.
Chocolate SauceMakes about 1 ½ cups1 cup organic cocoa powder½ cup raw agave nectar½ teaspoon cocoa bean extractpinch of sea salt2 tablespoons coconut oil (liquid) Combine cocoa powder, agave, vanilla and sea salt in a blender. While the machine is running, stream in the coconut oil. If not using right away, store in the refrigerator. Warm at room temperature or in the dehydrator, until it becomes liquid again. Chocolate Milkshake Serves 22 cups raw vanilla ice cream ½ cup almond milk3 tablespoons chocolate sauce Combine ingredients in a blender, process until smooth and creamy.
