    There's Something About Mila

    This post is dedicated to Bitt. She wanted to know about a product I use on a fairly regular basis. Mila.

    Mila is created by a network-marking company called Lifemax. Mila "The Miracle Seed," as it is called by the company, is said to have the highest and safest concentration of Omega-3 fatty acids, antioxidants, fiber and phytonutrients of any source on the planet.

    What makes Mila different from your basic, run-of-the mill chia seed? I really can't say. (Sorry, Bitt)

    What I can talk about is what the information I have read from the company and I can share a bit of my own personal experience with the product.

    To start off, I believe chia seeds (no matter the brand) promote weight loss and overall health. And I have enjoyed using it in my recipes. Yeah, chia!

    Here is my contribution to the holiday. Please enjoy.

    Essene Stuffing
    3 cups diced Herb Essene Bread
    ¼ cup chopped onions
    1 cup chopped celery
    1 tablespoon poultry seasoning
    1 teaspoon sea salt

    1 In a large bowl, combine diced bread, onion, celery, poultry seasonings and sea salt.

    2 Place mixture on Teflex sheet. Dehydrate at 100 degrees for 3 hours.

    I'm taking next week off for Thanksgiving. I feel so blessed that my wonderful stepson has entered our lives again and I want to spend this week reflecting on what my family means to me.

    My mother asked me to write something to help my Aunt Gigi get on a path of healthier eating. And although I would be the first to say “Go Raw” I realize saying it is much easier than doing it.

    If I can offer Aunt Gigi a smoothie or salad recipe here or there, she could take baby steps into more greener pastures.

    But first I should remind her of the reasons why incorporating more fruits and green leafy vegetables into her meals (and less of the processed, dead crap) is beneficial to her health. Also, exercise is a must with our family history. You feeling me?

    So here are the Top Five Reasons you, Aunt Gigi should eat healthier.

    5. You gain a tremendous amount of energy to continue to stay out all night dancing.

    4. You feel good. Just ask the man who was rubbing up against you on the dance floor.

    3. You become positive and happy without doing major drugs.

    2. Your mind becomes sharp and alert, so when you get pulled over, you can think of something clever to tell the police officer.

    1. You live longer. I’ve got a few bucks on you outlasting mom, do me proud.

    Recipe #39 of the Complete Book of Raw Food Endeavor is Rhio’s Marinated Collard Ribbons (p. 65).
    Now this is a risky recipe for Aunt Gigi to try because I don’t think any woman in our family, excluding myself, has ever eaten collards raw.
    I believe that there is a family law, punishable by death, which states collards (or mustards, or turnips) greens must be cooked a minimum of 8 hours or until the paint wears from the walls, whichever happens first.
    Trust me Aunt Gigi, these marinated collards are delicious and you will enjoy.
     Spicy Marinated Collardsadapted from Rhio's recipe
    1 bunch collard greens, stems removed, cut into thin strips (Chiffonade)2 tablespoons olive oilJuice of one lemon2 teaspoons sea salt1/4 teaspoon cayenne peppera pinch of red pepper flakes
    In a large bowl, combine collard strips, olive oil, lemon, sea salt, cayenne and red pepper flakes.
    Massage the collards with your hands. Cover the bowl and let set at room temperature for 1-2 hours.

    A Blended Salad is a mixture of raw, leafy greens and other foods blended together to create a smooth, creamy consistency. Eating a salad prepared in this manner is quick, convenient and increases absorption of important nutrients.

    This is a pretty standard recipe and the beauty of the salad is you can add your favorite vegetables to eat.

    Blended Salad by Paul Nison, p. 93
    1 handful leafy greens (lettuce and spinach work best)
    1/2 cucumber
    1 stalk celery
    1/2 lemon, juiced
    1 handful sunflower sprouts (optional)
    1/2 red pepper (optional)
    1 avocado
    1 teaspoon flaxseed oil (optional)
    1 tomato

    Blend all ingredients and serve.

    On an episode of "He Said She Said" Man on the Raw and I talked about food combining and offered an overview of the principles of food combining. I wanted to touch base with it again after Traci left a comment on the post.

    I want to stress that during "Everything I Eat -Raw" thus far, I am not practicing food combining at all.
    Not to say that I won't. In between Living Light's culinary school creations, I actually was thinking about trying different raw food "diets" (mono, juice feasting *a third one? IDK*, 80-10-10, etc.) and documenting those experiences. For now, I am enjoying sharing the raw goodies that are out there to be had.

    On to the question.

    "What are examples of "concentrated carb/concentrated protein?"

    Concentrated Carbohydrates are considered foods that are on the the top of the glycemic index, mainly starchy vegetables and fruits.

    Here is a brief list of various vegetables and fruits carrying a high glycemic index:

    I had the fortune to get my hands on a copy of "Raw for Dessert: Easy Delights for Everyone" and since Valentine's Day is steadily approaching I thought I would take the time to discuss this book.

    "Raw for Dessert" is an eclectic collection of sweet and scrumptious recipes from internationally recognized Raw Food Chef and instructor Jennifer Cornbleet.

    Cornbleet substitutes customary dessert ingredients such as flour, butter and processed white sugar, with ground nuts, coconut oil and dates and other healthy alternatives to create sweet treats that are bursting with flavor. She demonstrates that baking isn’t necessary to create the sophisticated Vanilla Bean Crème Brulee, comforting Chocolate Cake with Fudge Frosting or festive Pumpkin Pie.

    Covering the full spectrum of desserts from cakes and cookies, to pies, candy and creamy desserts, "Raw for Dessert" starts off with the “Basics” chapter featuring recipes, which delicious in their own right, are predominately used as the building blocks of Cornbleet’s other creations. All of the desserts are a breeze to construct and require no more time than it takes the Coffee Ice Cream to freeze. Yes, that’s right, coffee. Not all the ingredients are raw. Cornbleet is forthcoming with the use of non-raw items and provides a detailed ingredient list at the beginning of the book.

    Ideal for foodies, raw or not, with a mad sweet tooth, "Raw for Dessert" offers up a slew of tips, suggestions and recipes. Whether you are in the mood for cool and refreshing, like the Grapefruit Granita or leaning more to the exotic with the Indian dessert Kheer, this book will not disappoint.

    It was hard to choose a recipe to try for this review, everything reads so delectable. I finally decided on this candy. My eldest daughter, Jordan, is deathly allergic to most nuts and I was pleasantly surprised that this chocolate indulgence was nut-free. She happily ate the lot of them.
    Dark Chocolate Truffles
    1/3 cup virgin coconut oil, melted
    4 pitted Medjool dates
    ½ cup maple syrup or dark agave syrup
    1 cup cocoa powder or raw cacao powder
    1/8 teaspoon plus a pinch of salt

    Combine the coconut oil and dates in a small bowl and soak for 30 minutes. Transfer to a blender and add the maple syrup, ¾ cup of the cocoa powder, and all of the salt and process until very smooth. Stop occasionally to scrape down the sides of the blender jar with a rubber spatula. Transfer to a small mixing bowl and chill in the refrigerator for at least 1 hour.

    Now it‘s just about this point where you might be tempted to eat the dish as is. You know who you are. To be honest, who could blame you? It is rich and gooey and luxurious as all chocolate concoctions should be, but, please refrain from eating it. If you must get your chocolate fix, lick the blender cup. Believe me, the truffles are worth the wait.
    Place the remaining ¼ cup cocoa powder in a small bowl and set aside.

    Scoop out a heaping ½ teaspoon of the chocolate mixture. Pull it off the measuring spoon with your fingers and lightly roll it into a ball between your palms. Dip and roll the truffle in the cocoa powder, then place it on a plate or in a paper candy cup. Repeat with the remainder of the chocolate mixture. Chill the finished truffles in the refrigerator for at least 1 hour before serving.

    Stored in sealed container in the refrigerator, Chocolate Truffles will keep for a 1 week.

    VARIATIONSCoconut Truffles: Dip and roll each truffle in unsweetened shredded dried coconut instead of cocoa powder.

    Curry Truffles: Dip and roll each truffle in curry powder instead of cocoa powder.

    Mexican Chocolate Truffles: Add ½ teaspoon of ground cinnamon and a generous pinch of cayenne to the chocolate mixture in the blender. Roll each truffle in cocoa powder. (The Daily Raw Café Note: I added a bit of cayenne pepper to the cocoa powder.)

    Happy New Year everyone! I hope your 2008 is going as great as mine. I'm in heaven and I am so excited to finally share with you what I have been up to.

    I started another juice feast on Dec. 1 and I'm blogging my experience at Inspiration:Life. Some of you might know that's how The Daily Raw Blog started. It was a blog documenting my first juice feast back in May that lasted 28 glorious days. From there The Daily Raw Blog took a life of its own with recipes and it was an outlet for my creativity to shine.
    I'm so blessed to have it and to have all of you guys be part of it. So thank very much.

    And as an added bonus I met some really special people along the way.
    My husband has committed to going raw again in 2008 so if you can send him a silent prayer to get him going that would be appreciated. I have some really good recipes lined up for TDRC and my husband will be preparing many recipes for TDRC in the next few weeks so we have that to look forward to. Believe it or not he is the true talent in the kitchen. I'm lucky his talent just rubbed off on me.     Garlicy Green juicemakes 1-1.5 quarts

    1 pound of your favorite greens1 cucumber, chopped3 carrots, chopped1 garlic clove1 tablespoon hemp oil1-2 cups water

    1 Place cucumber, greens, garlic clove and carrots in a blender* with the water. Blend until ingredients break down into a thick mixture.

    2 Strain the mixture in a nut bag or painter straining bag into a large bowl. Squeeze the bag to get all the juices out of the pulp.
    3 Pour juice into a glass and add hemp oil.
    Don't forget to compote you pulp or mix with flax seeds to make crackers.
    *You can use a juicer instead of a blender. I use a blender because the clean-up is faster for the amount of juices I make. Also, please note if you use greens that are heavier in weight (kale, collards, etc.) a high-speed blender will work better at breaking down the greens.

    Detroit Zen Center are accepting applications for its Dharma Work Exchange Program. Through a 3- or 6- month exchange, they provide a unique opportunity to live a simple, sustainable, and service-oriented life in a community setting, based on the principles of Zen Buddhism. In exchange for room, board, and a small stipend, students will participate in 30 hours per week of manual work under the guidance of skilled workers and monks, in the on-site organic/raw café and grocery, as well as doing composting, recycling, woodworking, farming, gardening and general maintenance. In addition, exchange students are expected to make a weekly meditation practice schedule, which will be individualized and discussed with the Director.     Farm Sanctunary internships are available year round. Positions are filled on an ongoing basis as applications are received. Summer positions fill quickly, so if you're interested in these months, be sure to contact us well in advance.
    Happy Trails Farm Animal Sanctuary volunteers handle a great deal of clean-up work, and should be physically able to handle manual labor projects. They may also be called upon to staff booths at various community events and to help pass out various literature. In addition, volunteers may help with hauling animals to and from vet visits and adoptive homes, serve as tour guides at the sanctuary, and participate in planning committees for fundraisers.     Hawaii Naturopathic Retreat Center, an in-patient facility, provides 3-month long internships for naturopathic doctors who want to learn more about detoxification and lifestyle changes with raw food nutrition, juices, exercise and mind-body medicine in the treatment of chronic disease. Candidates must believe in a Nature Cure approach and must be familiar with at least one of the following modalities: IV therapy, raw food nutrition, exercise therapy and possibly practice some mind body procedures such as meditation, yoga, EFT, stress management, breath work or other psychotherapy or bodywork techniques. Interns may apply for an extension or a permanent remunerated employment. Interns will have free room and board and work 40 hours per week. Guidelines for starting internships are as follow: January, April, july and October, but some flexibility is possible.

    The other day I made something from your Raw Blog, for your test kitchen...the chocolate cupcakes! That post really got me, as I'm a chocolate lover all the way around. I have a raw catering business and this coming week my clients will be getting these delicious cupcakes as one of the desserts. I actually had brownie "dough" already made up, so added the vanilla and almond extracts like you had in your recipe, and had the coconut icing already made too, so added beet juice to colour it pink :D For a few of them I used a key lime filling as the icing.
