Because of the snowy weather outside here in Colorado, I am forced to play on my tile floor with my kitchen garden. Kitchen gardening and sprouting are great, don't get me wrong. I enjoy it. Below are some lentils I eventually sprouted. They were super easy. Soak in water overnight, drain in the morning. Rinse and drain until you get tails. For more details visit here.
But, alas, kitchen gardening doesn't replace getting down and dirty in the soil. The feel of the earth between my fingers, smiling as my son plays with the worms, the anticipation of what's to come. It's very grounding.
Spring please come. Maybe, just maybe if I share one of my favorite spicy dishes, I can bribe Spring's warm arrival. Maybe.
Lentil Patties with Coconut Peanut Sauce LENTIL PATTIES
1 cup almonds, soaked 1½ cups sprouted lentils ¼ cup water 4 tablespoons Nama Shoyu 1 teaspoon Cayenne pepper Juice of one lime lime zest ¼ cup olive oil 1 garlic clove, minced ¼ cup finely chopped cilantro 1 Combine almonds, lentils and water in a food processor. Process until almonds and lentils are a chunky consistency. Add Nama Shoyu, cayenne pepper, lime juice, zest, olive oil, garlic clove and cilantro. Briefly pulse until well combined. 2 Shape the mixture into ping-pong size balls. Flatten into patties. 3 Place on Teflex sheets. Dehydrate at 100 degrees for 4 hours or until top is completely dry. Flip patties over. Dehydrate an additional 4-6 hours or until the patties are dry on the outside and moist on the inside.
COCONUT PEANUT SAUCE 1 cup almonds, unsoaked ½ cup cashews 1 cup water, or more as needed 1 teaspoon ginger powder 2 tablespoons Coconut butter ¼ cup agave nectar ¼ cup Nama Shoyu Juice of 1 lime 1 tablespoon Red Pepper Flakes ½ teaspoon sea salt 1 tablespoon Turmeric
1 To make the Coconut Peanut Sauce, mix almonds and cashews in a blender to make a powder. Add ginger, water, coconut butter, agave nectar, Nama Shoyu and lime juice. Blend until you achieve a creamy sauce. 2 Pour into a bowl and sprinkle in sea salt, red pepper flakes and turmeric. Stir well. 3 Serve Lentil Patties and Coconut Peanut Sauce on a bed of Carrot and Zucchini pasta. (un) Cooking Tip:
If your sauce comes out to watery, place the sauce into a glass container and put in the dehydrator for a couple of hours.

Although, I'm originally from the Midwest, raised in the West and long to live in the East, I grew up on this Southern dish. Imagine my mom's surprise when I told her she doesn't have to cook collard greens to enjoy them. Who knew? Marinated Collard Greens MARINADE ¼ cup apple cider vinegar¼ cup chopped sun-dried tomatoes ¼ cup chopped scallions, white parts only 1 garlic clove, minced 1 teaspoon red pepper flakes 2 teaspoon sea salt, divided ½ teaspoon black pepper 1 bunch collard greens, washed 1/8 cup olive oil
1 In a large bowl, combine apple cider vinegar, sun-dried tomatoes, scallions, garlic, red pepper flakes, 1 teaspoon sea salt and pepper. Set aside.
2 Take several collard leaves and roll into a cylinder the shape of a fat cigar.
3 Using a knife, cut the through the collard cylinder, making strips. Repeat steps two and three until you have cut all the collard leaves.
4 Place strips in a large bowl. Pour olive oil on collard strips and sprinkle the remaining 1 teaspoon of salt. Massage the oil and salt into the strips until all are well coated.
5 Transfer the collard strips to the bowl with the apple cider vinegar marinade. Let marinate in the refrigerator for at least 4 hours, but overnight is best.
Servings: 4
Note: The raw collard greens won't get as soft as its cooked counterpart. That's a good thing, cooking your greens gets rid of all the water and nutrients that they provide.
Pot likker is the broth that is left in the pot after boiling greens. For this raw food recipe, the pot likker is the marinade. ;)

With the Great Sweetener Debate (mainly not raw agave nectar) in full swing, I thought I would weigh in where I could. And what better way to start than a product that's not raw. Didn't think I would go there, did you?
But check this out, in all seriousness. Whatever foods you choose to consume should be your business and yours alone. The recipes showcased on The Daily Raw Blog are what I eat personally and I want to share. I may not use all raw products, but that's okay, you can choose raw substitutions to match your needs. On the products that aren't of a raw nature, I want to provide you with as much information (based on my understanding of them) as possible so you can make your own decision.

On to NuNaturals. I recently had the opportunity to try out NuNaturals Stevia products and create some pretty tasty recipes.
NuNaturals’ NuStevia products provide several forms of stevia extracts in liquid and powder form. It contains zero calories and has a low glycemic index so it doesn't effect blood sugar levels, making it safe for diabetics.
Like stevia, a little goes a long way when it comes to NuStevia. In some of the components of the recipes, I used the bare minimum of extract (20 drops from a convenient dropper) and I still received a sweet dish. There was no strange aftertaste or smell, as a matter of fact, it brought out the natural flavors of the ingredients, only enhancing the recipe.

Luohan guo (or Luo han guo) is a fruit from China and Northern Thailand, traditionally used in medicine and as a sweetener. The fruit extract is nearly 300 times sweeter than sugar. According to Wikipedia, "The sweet taste of luohan guo comes mainly from the mogrosides, a group of Triterpene-Glycosides that make up approximately 1% of the flesh of the fresh fruit." NuNaturals is certified to contain a minimum 80% of the mogrosides in its Lo Han Supreme extract.
Cheesecakes! I have stated for the record that my favorite dessert is cheesecake. In the April/May 2010 of Fine Cooking there was a beautiful spread on cheesecakes complete with 18 variations. A few of which I have garnered inspiration.
Chocolate Cheesecake CRUST 2 cups walnuts, unsoaked ¼ teaspoon sea salt ¼ cup organic cocoa or carob powder 20 drops NuNaturals Pure Liquid Cocoa Bean Extract 1 cup dates, pitted, unsoaked
Process nuts, and sea salt in a food processor until fine; add powder, extract and dates. Continue to process until well-incorporated.
Transfer the mixture to a 9-inch springform pan and press evenly onto the bottom. Place the pan in the freezer until filling is ready.
FILLING 3 cups cashews, soaked for 1 hour to soften 1 ½ cup lemon juice (about 5-6 lemons) ½ cup organic cocoa or carob powder ¼ teaspoon NuNaturals Pure Liquid™ Cocoa Bean Extract ½ teaspoon NuNaturals Pure Liquid Alcohol Free Stevia, or more to taste
Mix cashews and lemon juice in blender; process until smooth and creamy. Add powder, extract and stevia. Continue to blend, maintaining a thick, creamy consistency. Make sure filling has no lumps.
Pour the mixture into the crust. Place the cheesecake into the freezer for at least 2 hours or until solid.
TOPPING ¼ cup Cacao Nibs Sprinkle cacao nibs on top of the cheesecake. When serving, cut the number of slices needed and replace the rest of the cheesecake in the freezer. Let the slices sit at room temperature for 30-45 minutes before serving.
Toss ingredients in a bowl. Spread mixture on mesh dehydrator sheet. Dehydrate at 115 degrees for 12-24 hours or until dry and slightly crunchy.
*Alternately, top cheesecake with slivers of fresh ginger.

Add mango, ginger, Lo Han and stevia. Continue to blend, maintaining a thick, creamy consistency. Make sure filling has no lumps.

Pour the mixture into the crust. Place the cheesecake into the freezer for at least 2 hours or until solid.
TOPPING Chocolate Glaze ¼ cup water ¼ cup maple syrup (not a raw product) ½ cup cocoa powder 2 tablespoons coconut butter
Combine ingredients in the blender until well combined. Pour the glaze on top of the cheesecake. Return the cheesecake to the freezer for an hour or until the glaze hardens.
When serving, cut the number of slices needed and replace the rest of the cheesecake in the freezer. Let the slices sit at room temperature for 30-45 minutes before serving.
Blueberry Cheesecake TOPPING ¼ cup blueberries 2 tablespoons raw agave nectar ¼ teaspoon sea salt

FILLING 3 cups cashews, soaked for 1 hour 1 ½ cup lemon juice (about 5-6 lemons) 1 ½ cups fresh blueberries 1 teaspoon organic vanilla extract ½ teaspoon NuNaturals Pure Liquid Alcohol Free Stevia, or more to taste
Mix cashews and lemon juice in blender; process until smooth and creamy. Add blueberries, extract and stevia. Blend until blueberries are incorporated, maintaining a thick, creamy consistency. The cheesecake should have a pretty purple hue. Make sure filling has no lumps.
Pour the mixture into the crust. Place the cheesecake into the freezer for at least 2 hours or until solid.
When serving, cut the number of slices needed and replace the rest of the cheesecake in the freezer. Let the slices sit at room temperature for 30-45 minutes before serving. Arrange blueberry topping on the cheesecake slices.
NOTE: One cheesecake recipe makes approximately 48 mini cheesecakes.

Since completing 80 days on my latest juice feast, uncooking my way through The Complete Book of Raw (on most days) has lost its luster. There are still a good handful of recipes I am eager to try but in the coming weeks I will be sharing my own recipes.
I also want to open the playing field to other raw cookbooks. The Complete Book of Raw Food Endeavor will continue but at a slower pace than anticipated. There isn‘t really a rush anyway. I’m not going anywhere, are you?
My grey hairs are making cameos around the hairline. I read somewhere that black sesame seeds were good for keeping dark, luxurious hair. It could be an old folklore but if I believe it will work than it will, regardless. I mean, a belief is simply a thought you keep thinking, right?
Sesame seeds are rich in minerals such as calcium, zinc and manganese. They also contain useful quantities of some B group vitamins including thiamin and B6 and are a useful source of vegetable protein.
Black Tahini * This Homemade Tahini recipe is the first in a 3-part series featuring black sesame seeds.
Makes approximately 2-2 ½ cups
2 cups black sesame seeds ½ cup cold-pressed sesame or olive oil, or more if needed
Process sesame seeds in a food processor or high-speed blender until seeds turn to a powder. Drizzle in the olive oil while the machine runs.
Pulse for 3-5 minutes, stopping, from time-to-time, to clean the sides with a spatula.
Continue to pulse until it's as smooth as you can get it, add a little more olive oil if necessary. It will be the consistency of a grainy paste. Transfer the tahini to a Mason jar with a lid. Refrigerate.
Fair-warning #1: If you are seeking a smooth, silky consistency you can find it here. The texture of this home-made tahini is slightly coarser than store-bought tahini, but it has the same delicious flavor.
Fair warning #2: If you love this recipe, double the recipe next time. As you will find with the first time around this process is very, very hot, sticky messy, so expect a fair amount of clean-up of the appliance of choice.
