    Cucumber Salad

    RAW RECIPE (photos)

    Serves 6

    3 cucumbers, peeled, thinly sliced
    ½ red onion, thinly slice
    ¼ cup apple cider vinegar
    1 tablespoon dill weed
    1 teaspoon sea salt
    1/8 teaspoon black pepper

    1 Combine cucumbers, onions and dill in a bowl.

    2 In a small bowl, whisk vinegar, apple cider vinegar, sea salt and pepper.

    3 Pour mixture over cucumber and onions. Gently toss. Cover and chill.

    Okay here's a grey area. I might have eaten something cooked but not quite sure. I was munching away on my banana chips thinking they were dehydrated minding my own raw business when Man on the Raw (without missing a beat) said "Those aren't raw. They fry them. What the f***?!?

    Are you telling me I just ate something that not only is NOT raw but it's fried??? Great, just great. So now do I feel like a failure because I wasn't techniqually 100% raw or do I just say whatever,

    Well, if you know me (and I think you might know a bit), I say "whatever", I'm not going to stress. To me, My Year of Living Raw continues untarnished.

    Detox Retreats at the Oasis is looking for energetic, self-motivated people to help us with their programs.

    Detroit Zen Center are accepting applications for its Dharma Work Exchange Program. Through a 3- or 6- month exchange, they provide a unique opportunity to live a simple, sustainable, and service-oriented life in a community setting, based on the principles of Zen Buddhism. In exchange for room, board, and a small stipend, students will participate in 30 hours per week of manual work under the guidance of skilled workers and monks, in the on-site organic/raw café and grocery, as well as doing composting, recycling, woodworking, farming, gardening and general maintenance. In addition, exchange students are expected to make a weekly meditation practice schedule, which will be individualized and discussed with the Director.     Farm Sanctunary internships are available year round. Positions are filled on an ongoing basis as applications are received. Summer positions fill quickly, so if you're interested in these months, be sure to contact us well in advance.
    Happy Trails Farm Animal Sanctuary volunteers handle a great deal of clean-up work, and should be physically able to handle manual labor projects. They may also be called upon to staff booths at various community events and to help pass out various literature. In addition, volunteers may help with hauling animals to and from vet visits and adoptive homes, serve as tour guides at the sanctuary, and participate in planning committees for fundraisers.     Hawaii Naturopathic Retreat Center, an in-patient facility, provides 3-month long internships for naturopathic doctors who want to learn more about detoxification and lifestyle changes with raw food nutrition, juices, exercise and mind-body medicine in the treatment of chronic disease. Candidates must believe in a Nature Cure approach and must be familiar with at least one of the following modalities: IV therapy, raw food nutrition, exercise therapy and possibly practice some mind body procedures such as meditation, yoga, EFT, stress management, breath work or other psychotherapy or bodywork techniques. Interns may apply for an extension or a permanent remunerated employment. Interns will have free room and board and work 40 hours per week. Guidelines for starting internships are as follow: January, April, july and October, but some flexibility is possible.

    OBUGS-Phat Beets Produce seeks indiviuals for their Farm Stand Ally Program. Allies work with Phat Beets Produce one day per week, one day with OBUGS, and one day on a collaborative school farm stand in North Oakland.
    The Optimum Health Institute's missionary program is a volunteer extension program for those who have graduated from the OHI holistic healing program and desire to continue on a spiritual path to heal themselves and others.     National Chocolate Milkshake Day This is Chocolate Milkshake recipe from The Daily Raw Blog's Almanac 2010Vanilla Ice Cream
    2 cups Thai coconut meat
    2 cups cashews, soaked for 1 hour to soften1 cup raw almond milk
    1 cup raw agave nectar, light in color¼ cup coconut oil, (liquid)
    2 tablespoons vanilla extract¼ teaspoon sea salt

    Place ingredients in a blender and process until smooth, creamy consistency. Pour mixture into a deep dish, cover it and place in the freezer for at least 6 hours. Overnight is best.

    Chocolate SauceMakes about 1 ½ cups1 cup organic cocoa powder½ cup raw agave nectar½ teaspoon cocoa bean extractpinch of sea salt2 tablespoons coconut oil (liquid)
    Combine cocoa powder, agave, vanilla and sea salt in a blender. While the machine is running, stream in the coconut oil.
    If not using right away, store in the refrigerator. Warm at room temperature or in the dehydrator, until it becomes liquid again.
    Chocolate Milkshake
    Serves 22 cups raw vanilla ice cream ½ cup almond milk3 tablespoons chocolate sauce
    Combine ingredients in a blender, process until smooth and creamy.

    I went to The Denver Living and Raw Food Cafe rawluck yesterday and I prepared this appetizers.

    Tamalitos (small tamales)

    15 corn husks

    Soak the corn husks in warm water for 2 hours to make them pliable.

    Corn filling:
    5 cups fresh corn, cut from ears
    2 cups cashews
    2 tsp. cayenne
    Sea salt, to taste

    Process 4 cups of the corn with the cashews, cayenne and salt until smooth. Add 1 cup corn and cilantro, don’t overprocess.

    “Refried Beans” filling
    2 cups sunflower seeds, soaked for 2 hours
    1 cup sun-dried tomatoes, soaked for 1 hour
    ½ tsp. miso
    3-4 tbsp. Mexican seasonings
    1 tbsp. olive oil
    2 tbsp. agave nectar
    1 jalapeno, chopped
    2 green onions, chopped
    2-3 sprigs cilantro leaves only
    Sea salt, to taste

    Process all ingredients; expect jalapeno, onions and cilantro, in a food processor. Add a few tablespoons of water at a time and process until you get a smooth consistency.

    Add jalapeno, onions and cilantro and pulse a few times to combine.

    Separate and dry the corn husks.

    Place about 2 tablespoons of corn filling on the center of the husk then add the bean filling.

    Fold the bottoms over the filling and then fold the sides over. Use husks strips to tie the top of tamalito. Serve with chili sauce.

    Chili sauce
    1 cup sun-dried tomatoes, soaked 2 cups of water for 1 hour (save water after soak)
    2 medium tomatoes
    ½ jalapeno
    2 green onion, white part only
    1 tbsp lemon juice
    1tbsp agave nectar
    4 tbsp. chili powder
    Sea salt, to taste

    Blend all ingredients in blender. Use the sun-dried tomato water to make create a liquid consistency.
