    10 Thoughts from Cherie Soria

1.One thing the world doesn’t know about me is …I was once a hairdresser.
    2. I am most proud of my 90-year old father.
    3. My biggest achievement has been the creation of gourmet raw vegan cuisine over 18 years ago, when raw food was no more than “roots and shoots” and no one considered that it would be delicious or comforting.
    4. My most memorable meal was [prepared by] my assistant, Colleen, and our office manager, Amanda. They surprised Dan and I with a special meal they made for us at Christmas. It was truly lovely.
    5. My perfect day is my husband Dan and I swimming naked in the surf on our favorite beach in Costa Rica (no one is around for miles!)
    6. Berries are my favorite superfood.
    7. I have been to so many beautiful places, but find that if I am happy, I can find beauty wherever I am.
    8. If I could be any animal, I would be my dog.
    9. In five years I see myself relaxing in my new home in Costa Rica and eating guanabana and jackfruit from my own trees
    10. My favorite invention is the Vitamix.

Cherie Soria is an acclaimed raw foods chef and instructor. She is the founder and director of Living Light Culinary Arts Institute and author of "Angel Foods: Healthy Recipes for Heavenly Bodies" and co-author of "The Raw Food Revolution Diet."

  • A Lucky Girl's Big Announcement

    A Lucky Girl's Big Announcement

I have some bad news and some very good news. Which would you like to hear first? Okay let's start with the not so great news.

The Daily Raw Blog's Almanac 2011 edition has been placed on the back burner. I have been overwhelmingly busy with life and I have had trouble finding a way to publish hard copies of the book. There just hasn't been enough time to write the book the way it deserves to be written.

I am hoping in the next year that I can work on a 2012. I want to thank everyone who submitted articles, events and tidbits. I appreciate all your efforts and I will take the time to organize the book (and my life) in the coming year.

    Now some pretty cool news.

I meet Dave the Trucker today. It was really cool. He has such a beautiful, genuine spirit.

An interesting encounter happened between his companion Tresa and myself. We both looked at each other like we have met before. We even hugged each other like we were old friends. Yet, we have no clue from where. We named all the places where our paths could have crossed but we could not figure it out.

There was a definite connection between us, too, but from where is a mystery. Maybe in a different time and space, but I know in my heart that I know this gorgeous soul.

Okay on to the great news.

I've been very, very coy about my big news and now I feel it's right to share the big news. We have moved to Fort Bragg, California.

It was no surprise how much I fell in love with the town of Fort Bragg and most certainly it has been a whirlwind romance. So it has been decided to take a chance and move there. I know it seems sudden and out of nowhere. I feel in my heart that it's the place I should be.

I was fortunate during my time in Fort Bragg to secure a job (more on that below) and a place to stay (temporarily). Actually by the time you read this, the children and myself have already have settled into Fort Bragg. Man on the Raw has decided to stay in Denver for a while.

    About the job.

I am very, very blessed. I am the Executive Assistant to Living Light International Founder and Director Cherie Soria and (her husband) Co-director Dan Ladermann.

I am very grateful for this opportunity, I couldn't have of dreamt a more perfect situation in a most beautiful place (Fort Bragg). I truly am a very lucky girl.

StellaRoseFoundation left a message on Garden Vegetable Linguine with Spicy Tomato Sauce post.

StellaRoseFoundation asks "what do you use to get your vegis to look like noodles. I bought a spiralizer but either can't use it properly or have the wrong tool.. HELP"

    StellaRoseFoundation,
I used the Spirooli Spiral Slicer to create those noodles.

I don't have many of my raw kitchen gadgets with me (this one included) or I would totally do a detailed video explaining it all. But I'll do you one better. Check out Living Light's newsletter from March of 2010; it has a video link to Cherie Soria demonstrating the various equipment that create noodles.

  • Garden of Eatin'

    Garden of Eatin'

You know what I realized? I don't start my posts with any sort of greetings. No “hello,” “how are you doing,” “what's happening," nada. So from this day forward I am saying howdy.

    Howdy! There much better.

I am sooo excited! One month from today, I will be checking in as a student at the Living Light Culinary Arts Institute. Woo hoo!

I can’t believe it, I have wanted to attend Living Light for over 6 years. One of the reasons Daily Raw Café exists is my desire to learn how to prepare raw foods.

It’s bizarre, I have never had the slightest interest in preparing cooked dishes at a culinary level, but there is something about using only living/raw ingredients and creating amazing dishes that stokes the fire within.

Somewhere along the way, I must have got an inkling of my raw culinary destiny. When I did a raw food demo at the Raw Spirit Fest in 2008, guess who introduced me? Go ahead, guess. You’ll never guess. Okay, pull my leg why don’t you? It was the founder of Living Light herself, Cherie Soria who introduced me as a chef! Wild and crazy.

I would have fainted right there if I didn’t have to show a room full of people how to make raw Thai Food.

How’s that for the Universe/Higher Power/God leaving a proverbial bread crumb.

So I followed the promising trail and here I am a month and a day (classes start on July 10th) from a new raw adventure.

On to garden. I love my garden. It is growing so beautifully and it’s such a zen experience tending to it. We won’t be getting our greens from the grocery store this summer. We are S-E-T. We have been blessed with an abundance of kale, lettuce, mixed greens, beet greens, weeds that taste like beets and so much more. We are juicing them, using them in smoothies, but here are a few of the dishes I have created showcasing greens from our garden. I hope you enjoy.

This is truly a garden salad. Man on the Raw and I literally cut greens and piled them in our bowls and ate [and laughed and kissed and stuff ;)] in the garden. It was nice, very nice.

    “Garden” Salad

Serves One Adam and his Eve

    ½ lemon, juiced
1 tablespoon hemp oil, or your favorite oil
1 garden full of your choice of greens
pinch of sea salt, or more to taste

Stir lemon juice and oil in your bowl. Add the sea salt . Fill your bowl up with greens from your garden. Toss gently with a fork, mixing all ingredients together.

Note on photo: On my salad I preferred ½ of avocado and hemps seeds instead of the oil.
    Bonjour!

  • The FUNdamentals of Fort Bragg

    The FUNdamentals of Fort Bragg

Let me start off saying “thank you” to all who wrote beautiful words of support by email and in the comments section. I really appreciate it. I don’t have time right now to answer everyone back individually (especially in the comments box) but please know that you are in my thoughts.

    On to Fort Bragg

Surrounded by the of Northern California's redwood forests (home to those winding roads) and the Pacific Ocean, Fort Bragg is a small town located in coastal Mendocino County.

According to Fort Bragg’s website, the area was home to the Native American Indians, most of whom belonged to the Pomo tribe. They were hunter-gatherers who lived close to the land and sea.

In 1855 an exploration party from the Bureau of Indian Affairs visited the area looking for a site on which to establish a reservation and, in the spring of 1856, the Mendocino Indian Reservation was established at Noyo. It was 25,000 acres and extended from what is now Simpson Lane to Abalobadiah Creek and east to Bald Hill.
In the summer of 1857, First Lieutenant Horatio G. Gibson established a military post on the Mendocino Indian Reservation approximately one and one-half miles north of the Noyo River. He named the camp for his former commanding officer Captain Braxton Bragg, who later became a General in the Army of the Confederacy. The official date of the establishment of the fort was June 11, 1857. Its purpose was to maintain order on the reservation.

Now, from my observation, it seems to be a mix of working-class town folks in jeans and strip shirts and free-spirit hippies in long-flowing garb and dreads. To tell you the truth, I haven’t really found out what this town is all about. It is still a mystery.
I plan to explore when I get a moment to breathe.
On my walks to and from school, I have noticed he sky has been grey and misty on most days (nothing too gloomy, it’s almost romantic). When the sun finally makes it to Fort Bragg, it beams through the clouds and it’s a phenomenal sight. The air is full of warmth either way in spite of the sky’s hues. A few nights and early mornings have been a bit nippy but nothing to unbearable.

I have a slight confession to make. I am falling in love… with Fort Bragg. It started out as a school-girl crush. I adore the mild weather (can you imagine the garden I could create YEAR-ROUND), the friendly people, the easy navigation of the streets, the beach and I, especially, LOVE the fact that the premier raw foods school is here. All infatuation-worthy reasons. Now my crush has developed as full-blown love. But I have a tendency of falling head over heals fast and then falling flat on my face. So the next step is to find out what lies deeper in Fort Bragg, jobs, a place to live, schools for the children, etc. I am afraid that this love affair with Fort Bragg will have to proceed slow and steady before I make any rash decisions about my family’s future.

Carrot CakeThe first class you have to take at Living Light is the FUNdamentals of Raw Living Foods. It is an entry-level class where you learn the basics of sprouting, making kraut, nut milks and how to use equipment of a raw food kitchen and so much more. This class is a prerequisite for Essentials of Raw Culinary Arts, Raw Culinary Arts Associate Chef and Instructor Training and the Gourmet Chef series.

Herb CheeseIt was a laid back sort of day full of demos and lots of tasty foods to try. There was no hands-on training so we didn’t don our chef wear.

    Almond Milk, Granola, Brownie
We met all of our instructors, including Founder and director Cherie Soria. I couldn't believe it! "The Mother of Gourmet Raw Vegan Cuisine" actually teaches quite a few of the classes, more than I had anticipated. That was a nice surprise.

LunchThe Snail: I have never seen a snail inside its shell so I took several (hundred) of photos, I was fascinated by them.
