Hello everyone! I want to thank you all for the patience and support you have given me these past three months during my juice feast. I am happy to say that starting next week, The Daily Raw Blog will return to posting 4-5 days per week.
Also there are some new and exciting things going on and I hope you will enjoy.
Monday (and sometimes Friday) features "Focus On"
The Daily Raw will "Focus on" a spice, an ingredient, a piece of equipment, etc. There will be great tips, history and information on an item along with a recipe.
Tuesday honors the readers The features include "Dear Daily Raw", surveys, reader feedback, questions, comments, etc. If you have a raw food kitchen question, forward to "Dear Daily Raw" at yahoo.com. Your question will be posted in Tuesday's section.
Wednesday is Recipe Day Traditionally, across the country Wednesdays are food day for newspapers. It will be no different for The Daily Raw.
Thursday is the day for News You Can Use and the Calendar listing If you have an raw food event you would like to have posted, pass it along for Thursday's Calendar section. Send items to yahoo.com.
Fridays is my day off, well, actually it's my Test Kitchen day. I'll take the day to develop new recipes and test them out.
Unless I want to share with you what I'm working on or if it's a special occasion, there won't be any posts on Fridays. But you never know what surprises I might have in store.
And don't forget about the monthly Daily Raw Blog Recipe Challenge .

The timer went off, I heard the slight humming on the counter, but alas the “trick or treat” pleas fell on deaf ears. My blender, food processor, and, the leader of the pack, dehydrator had threaten to prank me if treats were not produced.
And low and behold, they made good on it, several times over. What better time than the day before for Halloween to showcase the raw food calamities at the Daily Raw Café.
Of course, more times than not, my kitchen and I play well together, creating tasty treats to keep those impish machines at bay. Fortunately, the odds are in my favor of making something edible.
I won’t divulge exactly what went awry with each dish. I consider them works-in-progress and they just haven’t found their way yet. Besides, I learn more from the "tricks" than I do the "treats."
Then again, if it weren't for those mischievous appliances giving me these culinary mishaps, I would not have anything to blog for today now would I?

On Saturday, I volunteered for the Tree of Life Rejuvenation Center at the first annual Denver VegFest and Health Expo.
The fest was at the new Ritz-Carlton hotel.

If you haven't tried Two Moms in the Raw granola or sea crackers, you are majorly missing out. They are 100% raw and organic and 200% delicious.
She gifted me a bag of my favorite granola(the Goji berry mix) and I'm going to create something tasty ( As soon as I find my bag. I think the kids swiped it as soon as I came home).
I have always been a fan of Brigitte, author of one of my favorite raw books Rawsome.
When my husband and I first went raw back in the day, we took an raw Asian class from Brigitte. She is very beautiful, vibrant and youthful. Spending time with her gives you such a wonderful positive energy. She is a great lady. My camera battery died about 10 minutes into its usage so I didn't get to take too many photos. A few raw booths were at the festival. I'm excited to report that there will be a new restaurant in Denver that will serve Organic, vegetarian, vegan and raw food. The restaurant, Solar, is located at 2615 Welton St., in the Historic Five Points area. Fatima, owner of Solar was on hand at the fest, offering raw falafels balls, wraps, desserts. Of course, this was the point where my camera went kaput. Here were a few of the other raw or semi-raw booths.
I was at the festival promoting Dr. by Gabriel Cousens' new book "There Is a Cure for Diabetes: The Tree of Life 21-Day+Program."
In my excitement of the event I forgot to purchase my copy of the book. My mother and aunt both have diabetes and it was something I wanted them to take a look at. I am every interested in Dr. Cousens approach to introducing non-raw eaters into eating raw.
I have been eating a mostly raw diet for 4 years now and my mother still looks at me like I'm eating something from outer space. It's just broccoli mom.
To be fair, she has started drinking green smoothies. You gotta crawl before you can walk.
A little birdy told me that Dr. Cousens was asked to speak at next year's event. That will very exciting if it happens.

Here's a grown-up version of nachos to celebrate the day. And while you're chowing down on the nachos read the "I Love Nachos Day" ecards you sent to each other.
Chili Lime Flax Crackers1/2 cup ground brown flaxseeds1/4 cup soaked golden flaxseeds1/2 tablespoon chili powderJuice of one lime1/4 teaspoon sea salt 1 Combine ingredients in a large bowl until well mixed. 2 Spread mixture as thin as possible Teflex sheet. 3 Dehydrate at 110 degrees for 5 hours. Flip crackers over, remove teflex sheet and dehydrate an additional 5 hours.
Pepper Flax Crackers1 cup soaked golden flaxseeds 1/2 tablespoon black pepper1/2 tablespoon red pepperJuice of one lime 1/4 teaspoon sea salt 1 Combine ingredients in a large bowl until well mixed.
2 Spread mixture as thin as possible Teflex sheet.
3 Dehydrate at 110 degrees for 4 hours. Flip crackers over, remove Teflex sheet and dehydrate an additional 4 hours.
“Refried Beans” 2 cups sunflower seeds, soaked for 2 hours 1 cup sun-dried tomatoes, soaked for 1 hour ½ teaspoon miso 3-4 tablespoon Mexican seasonings 1 tablespoon olive oil 2 tablespoon agave nectar 1 jalapeno, chopped 2 green onions, chopped 2-3 sprigs cilantro leaves only Sea salt, to taste
1 Process all ingredients; expect jalapeno, onions and cilantro, in a food processor. Add a few tablespoons of water at a time and process until you get a smooth consistency.
2 Add jalapeno, onions and cilantro and pulse a few times to combine.
Pear Salsa1 pear, finely diced1/2 red bell pepper, finely diced1/2 shallot, finely diced1/2 jalapeno, finely diced5 sprigs cilantro, leaves onlyJuice of one half lime1/4 teaspoon sea salt Toss ingredients together. As usual my dear hubbie doesn't work in measurements. I did pin him down (which was kind of fun) to give me the salsa ingredients.

Toss ingredients together.
Guacamole one avocado Cory's salsa Sea salt, to taste
1 Peel and mash the avocado in a bowl. 2 Add one or two tablespoons of Cory's salsa. Combine well. Add sea salt Other Nacho toppings Avocado cubes Black OlivesGreen Olives Jalapenos Lettuce Sour Cream Walnut Taco Meat
Here are the ingredients I used to create my recipes for The Daily Raw Blog Recipe Challenge
1. Red Grapes 2. Cashews 3. Almonds 4. Garlic 5. Red Pepper 6. Lemon 7. Tomatoes
Focaccia with Grapes Yield: 12 slices
2 cups flax seeds, ground into flour 1 cup almonds, ground into flour ¼ cup olive oil, plus more for drizzling 2 teaspoons agave nectar 1 garlic clove, minced 1 tablespoon chopped onions 2 tablespoons Italian seasonings 2 teaspoon sea salt 1/2 cup red grapes, sliced
1 Combine flax and almond flours in a large bowl. Add olive oil, agave nectar, garlic, onion, rosemary and sea salt. Mix well.
2 Fold in grapes.
3 Spread Focaccia dough on two Teflex-sheets, making them about 1/4-inch thick. Drizzle with olive oil. Place in dehydrator at 140 degrees for 4-6 hours or until Focaccia is dry on the top.
4 Flip over and remove Teflex sheets. With a pizza cutter, score the Focaccia into six large rectangles. You should have 12 slices of Focaccia bread. Drizzle with olive oil. Dehydrate at 110 degrees for an additional 8-12 hours or until the Focaccia is dry and semi-hard on the outside but soft and somewhat moist on the inside.
The Daily Raw Blog Kitchen Tip: From time to time I use a thermometer to check the temperature of the foods I dehydrate. Particularly when I raise the temperature of the dehydrator. I just like to make sure the temperature of my food doesn't rise also.
My 1, 2 and 8-year old children are used to mom's raw food creations. For better or worse, they have acquired a taste for fresh fruits, vegetables, nuts and seeds. Kevin, my 14 year-old stepson is the new kid on the block and has come from a bag-of-candy-a-day habit. Now, when I create dishes, he is the gauge I use to determine if my recipes are up to par. I am pleased to say that he has asked me to make this recipe twice since it's conception.
Red Pepper Aioli 1 cup cashews, soaked for an hour ¼ cup water 2 garlic cloves, minced juice one one lemon ½ red bell pepper, seeded and chopped 2 tablespoons olive oil 2 teaspoons sea salt
1 Combine cashews, water, lemon juice and garlic in a blender. Blend until cashew becomes a thick, smooth mayonnaise. Add more water one tablespoon at a time until you cashews break down and you achieve desired consistency.
2 Add in the red peppers, olive oil and sea salt. Briefly process until peppers are smooth. 3 Serve with bread, cucumbers, mushrooms and tomatoes.

I would like to thank Anne at Raw Yogi Journal II for today's post. If it weren't for her, I wouldn't have thought of raw cupcakes.
We've never corresponded or been formally introduced (Hi Anne, I'm Teri) but I enjoy reading her blog. The first time I read it, she had a post on cupcakes. She set a project for herself to find a way to make raw cupcakes that looked as pretty as the ones she had posted but didn't use nuts (which I understand why). Even though I have a lot of recipes utilizing nuts, I don't eat them much on a day-to-day basis.
In my recipes I try to use the bare minimum of nuts without sacrificing the dish. I enjoy using nuts, they give you so many options of creating raw food. As I was preparing the cupcakes, I was humored by the fact that I used walnuts to make a meatloaf and now I'm making cupcakes. I thought that was kind of funny. And those same walnuts can be used to create nut milk, flour, bread, a quick snack the list could go on and on and I'm only limited by my imagination. Anne, I tried to avoid the nut issue but I think by making the cupcakes miniatures you can achieve the best of both worlds. And plus they're so darn cute. ;) Recipe Notes: 1 To save time, I went to a juice bar to get my beet juice (I was thirsty) but, you can grate a small piece of beet and extract the juice from that.

3 You can adjust the amount of agave nectar used in the coconut icing from 1/2 to 1/4 cup depending on how sweet you like your icing. 4 I put liquid chlorophyll in my coconut water everyday so I have it on hand. You should be able to find it in any health food store.
1 cup walnuts, unsoaked 5 Medjool dates, unsoaked, pitted 1/8 cup raw or unsweetened cocoa powder 1 teaspoon coconut oil, liquid form 1 teaspoon vanilla extract ½ teaspoon almond extract ¼ teaspoon sea salt
COCONUT ICING 1 cup coconut pulp 2 tablespoons coconut oil ½ cup agave nectar ¼ cup coconut water ½ teaspoon vanilla extract dash of sea salt
PINK ICING 1 tablespoon coconut icing ¼ teaspoon beet juice
LIGHT GREEN ICING 1 tablespoon coconut icing ¼ teaspoon liquid chlorophyll CHOCOLATE ICING 1 tablespoon coconut icing ½ teaspoon unsweetened cocoa powder ¼ teaspoon maple syrup ¼ tablespoon unsweetened coconut flakes, for garnish
1 Puree coconut pulp, coconut oil, agave nectar and coconut water in the blender until you achieve a smooth consistency. Add vanilla extract and sea salt.
2 In three small bowls, place 1 tablespoon each of the coconut icing.
3 In the first bowl add the beet juice and mix until the icing turns pink. In the second bowl, add the chlorophyll to the icing and mix until the icing turn light green. In the third bowl, add the cocoa powder and maple syrup to the icing, stir until it turns a dark brown.
4 Pour the remaining coconut icing in a glass bowl and cover with plastic wrap. Place all the icing in the freezer while you make the cupcakes.
5 Process walnut and dates in a food processor until mixture sticks together. Add sea salt, vanilla extract and almond extract.
6 Roll small eight balls out of the mixture and place each one in 1 ¼-inch baking cups. Mold the sides of the baking cups around the balls and form into a cupcake shape.
The folks at Serious Eats has declared October 18TH "National Meatloaf Appreciation Day" and to celebrate they have invited all to submit their favorite meatloaf recipe. I love a challenge. So, I created this delicious nut-based meatloaf with spinach and tangy sun-dried tomato ketchup to show, you can have comfort food and still eat raw.
I'm really proud of this dish because it helped me conquer a fear of mine. I can be a bit of a perfectionist when it comes to just about everything I do. Often I try to reach for the stars, falling short alot, but I keep reaching. I'm not perfect. I know shocker, huh?
I want my recipes to look good but more importantly, I want them to taste off the hook. I was fearful that this dish would make me fall short and it wouldn't turn out the way I like. Yes, I realize if it turns out wrong, start over and do it again. Which I have, BUT THIS dish is special. :)
Anywho, I snapped out of that perfectionist mind-set real quick when I remembered this recipe isn't any different than my others.
Although it's not listed, but my love of raw food is the first ingredient in every single one of my recipes. My heart has a hand in the preparation of every raw meal I create and so I'm guaranteed a tasty dish.
I was right, this dish taste darn good, if I say so myself. And like the cooked version, it was delish the next morning.
On today's menu:Spinach-Stuffed MeatloafLemon Green BeansHoney-Glazed Carrots SPINACH-STUFFED MEATLOAF
*2 cup walnuts, soaked for 4-6 hours 1 cup almonds, soaked for 4-6 hours 2 stalks celery, chopped 1/2 medium yellow onion, finely chopped 1 clove garlic, minced 1 cup sun-dried tomatoes, soaked until soft, reserved 1 cup water 2 tablespoons chopped fresh parsley 1 teaspoon poultry seasoning 2 cups fresh spinach, washed and stemmed 2 tablespoons olive oil Juice of one half lemon 2 teaspoon sea salt, divided 1 teaspoon black pepper 1 cup SUN-DRIED TOMATO KETCHUP (recipe follows)
1 Place spinach, olive oil, lemon juice and 1 teaspoon sea salt Ziploc bag and marinate for 1 hour. 2 In a food processor, combine walnuts, almonds, sun-dried tomatoes, 1/2 cup reserved tomato water, parsley, onion, garlic and celery. Add the remaining 1/2 cup water one tablespoon at a time to moisten the meat loaf. Be careful not to over moisten. 3 Place meatloaf mixture in a large bowl. Add poultry seasoning, pepper and 1 teaspoon sea salt. Mix well. 4 Spread meatloaf mixture on a Teflex sheet into a shape into a rectangle 3x9-inches . Place spinach mixture on top. Roll up the rectangle carefully, beginning at the short side and using the sheet to lift.
5 Transfer loaf to a second Teflex sheet. You should have enough meat to create three mini loaves.
6 Cover with sun-dried tomato ketchup. Place in dehydrator at 115 degrees for an hour. 7 Make 1 inch slices of meat and arrange on the Teflex. 8 Dehydrate at 115 degrees for an hour. Turn over slices, spread sun-dried tomato ketchup and dehydrate an additional hour. *Please Note: In the bottom left corner of the ingredient photo is ground brown flax flour. In the preparation of the recipe I found I didn't need it.
SUN-DRIED TOMATO KETCHUP 1 cup sun-dried tomato, soaked, 1/4 c reserved water 1/4 cup raisins, soaked 1 T Italian Seasonings 1/4 tablespoon chopped onion 1 clove garlic, minced Combine ingredients in a blender until mixture is slightly smooth, yet chunky.
HONEY-GLAZED CARROTS 4 cups baby carrots 2 tablespoons honey Juice of one half lemon Dash of sea salt
1 In a small bowl, put honey and salt. Squeeze in lime juice. Whisk ingredients together. 2 Slice the carrots very thin, put them in the honey mixture. Let marinate at least an hour.
Servings: 4
LEMON GREEN BEANS 2 cups green beans, cleaned Juice of one half small lemon Lemon zest 1 tablespoon olive oil 1 teaspoon sea saltDash crushed red pepper
1 Cut green beans in bite-size pieces. 2 Place the beans in a plastic container or Ziploc bag. Put lemon juice, olive oil, sea salt, zest and red pepper flakes in the bag. Let marinate for at least an hour or longer.
Servings: 4 To take nostalgia to the max, serve the meatloaf with Smashed "Potatoes" and Chives.

Chunky Marinara Sauce 2 ½ cup sun-dried tomatoes, soaked for 1 hour to soften, reserve soaking water 4 Roma tomatoes, seeded, roughly chopped 4 Medjool dates, pitted and soaked for 1 hour to soften 2 cloves garlic, minced ½ onion, roughly chopped 2 tablespoon Italian seasoning 1 tablespoon olive oil ½ teaspoon sea salt ½ teaspoon pepper
Combine dates Roma tomatoes, garlic, onion, Italian seasonings and olive oil in a blender. Add sun-dried tomatoes, using soaking water to get the blender going. Puree until you reach a chunky consistency. Add sea salt and pepper.Almond Nutballs2 c almonds, soaked for 6-8 hours1 clove garlic, minced1/2 green sweet bell pepper, diced1/2 yellow sweet bell pepper, diced1/2 yellow onion, diced1 small bunch flat-leaf parsley, finely chopped1/4 c sundried tomato paste (recipe below)In a food processor, grind almonds into pulp. Place in a large bowl and add remaining ingredients. Form into meatballs. Dehydrate for 4-6 hours until dry and firm.Sundried tomato paste1/4 c sundried tomato, soaked until soft, reserve water1 clove garlic 3 T sundried tomato waterIn a blender combine ingredients until it forms a smooth paste. Cranberry-Raisin Essene Bread Soft wheat berries were my first. Hard wheat berries are more for the yeast breads. Oat groats are not really in the same league. Rye never entered the picture. Like my husband, once the Durum wheat’s distant Egyptian relative sprouted into me life, there were no others.
Essene the grain at the end of the tunnel and its name was Kamut. I’m certain I’m committing a bit of blasphemy. Casually, chatting on the subject of an ingredient used in the Bible’s Essene Bread. If I am, I beg the powers that be… please forgive.
But really, how can you blame me? It was a close race. Both grains are economical, easily sprout and work well in Essene Bread. But my Kamut is one high protein, vitamin E, magnesium, zinc-packed grain.
Kamut has a much richer and buttery flavor than the sweet wheat berries, which could explain it’s somewhat higher fatty acid content. Oh well, I ramble.
Not that wheat berry is the re-bound boyfriend. It has qualities that make it appealing in its own right. For instance, sprouting wheat berries increases its vitamin C content by 400 percent- not too shabby. Low in calories – works for me. And wheat berries did grind to flour (in my coffee grinder) a bit better than my dear Kamut, which left me with a grainier texture compared to wheat’s fine quality.
No matter which grain you prefer, it’s all good.
Back in the biblical day the sprouted-grain breads were probably baked on hot rocks under the blazing sun. Now, depending on where you live, the sun could be an option, but I’d try a dehydrator first and see how you like that.
There are many good versions of Essene breads on the internet, with the most basic recipe having only one ingredient, sprouted grain.
1 In a food processor, grind the grains well. If your processor doesn’t have a powerful motor, use ¼ cup of water to get things going. Stop every so often to scrape the sides of the food processor. Blend the mixture until it forms sticky dough.
2 Divide the mixture in half and spread each half on a two Teflex sheets, forming 8 x 8 squares.
3 Dehydrate at 110 degrees for 4 hours, flip over and with a pizza cutter, score into nine slices. Dehydrate an additional 6-8 hours or until the bread is crispy on the outside and moist on the inside. Alternatively, you can form into small loaves, no more than 1 ½ inches thick. The dehydrating time should be increased by a few hours.
I didn’t have much success with making loaves. The outside was perfect but the inside fermented a bit before completely drying but It had a sour dough taste to it. You would think the dry Colorado air would help a girl out, but I guess you have to live in the deserts of Nevada to get some love. Once you are comfortable with the basic recipe, you can add ingredients to suit your fancy.
Herb Essene Bread 4 cups sprouted grains, Kamut, wheat berries, rye, etc. 1 cup almond flour 2 tablespoon olive oil 2 tablespoon Herb Blend* 1 teaspoon sea salt

2 Place dough in a large bowl and add almond flour, olive oil, herb blend and sea salt. Combine well.
3 Divide the mixture in half and spread each half on a two Teflex sheets, forming 8 x 8 squares.
4 Dehydrate at 110 degrees for 6 hours, flip over and with a pizza cutter, score into nine slices. Dehydrate an additional 6-8 hours or until the bread is crispy on the outside and moist on the inside.
Combine seasonings in a coffee grinder and grind until fine.
Pizza Bread 4 cups sprouted grains, Kamut, wheat berries, rye, etc. 1 cup almond flour ½ cup soaked Sun-dried tomatoes ½ cup sliced Kalamata olives ½ garlic clove, minced 2 tablespoons olive oil ½ teaspoon sea salt
1 In a food processor, grind the grains well. If your processor doesn’t have a powerful motor, use ¼ cup of water to get things going. Stop every so often to scrape the sides of the food processor. Blend the mixture until it forms a sticky dough. Remove from processor and place in a large bowl.
2 Add sun-dried tomatoes, garlic and olive to processor. Briefly process to make a thick paste.** 3 Place dough in a large bowl and add almond flour, sun-dried tomato paste, olives and sea salt. Combine well.
4 Divide the mixture in half and spread each half on a two Teflex sheets, forming 8 x 8 squares.
5 Dehydrate at 110 degrees for 6 hours, flip over and with a pizza cutter, score into nine slices. Dehydrate an additional 6-8 hours or until the bread is crispy on the outside and moist on the inside.
**You may also add the ingredients to the dough without processing into a paste. The paste option produces a tomato-red colored bread.
Raisin Bread 4 cups sprouted grains, Kamut, wheat berries, rye, etc. 1 cup almond flour ½ cup soaked golden raisins ½ cup soaked Thompson raisins ¼ cup agave nectar ¼ teaspoon sea salt
1 In a food processor, grind the grains well. If your processor doesn’t have a powerful motor, use ¼ cup of water to get things going. Stop every so often to scrape the sides of the food processor. Blend the mixture until it forms a sticky dough.
2 Place dough in a large bowl and add almond flour, raisins, agave nectar and sea salt. Combine well.
3 Divide the mixture in half and spread each half on a two Teflex sheets, forming 8 x 8 squares.
4 Dehydrate at 110 degrees for 6 hours, flip over and with a pizza cutter, score into nine slices. Dehydrate an additional 6-8 hours or until the bread is crispy on the outside and moist on the inside.
5 Serve with honey butter (recipe below).

Final notes: Please keep in mind, the more wet ingredients you add to the basic bread recipe the longer it will take to dehydrate. Also, other factors come into play. The type of dehydrate you have, where you live, your preferences, etc. Use your best judgment on determining the tastes and textures of your bread.

This raw recipe for alfredo sauce is very creamy and full-bodied. The longer it sits, the richer the flavors become. Try it with one of the pastas below.
Zucchini Noodles with Alfredo Sauce 2 cups cashews, soaked 1½ cups water 1 garlic clove, minced juice of one lemon 2 tablespoons olive oil 1 teaspoon sea salt ½ teaspoon white pepper red pepper flakes (optional) Process cashews, garlic, lemon juice, one cup of water, olive oil, sea salt and pepper in a blender. Stream in remaining half cup of water until you achieve a creamy sauce.
Serve with zucchini noodles on a bed of spinach. Garnish with red pepper flakes.

Use a spiralizer to make the zucchini noodles. No spiralizer? No worries, use a vegetable peeler to create pasta noodles.

Well, I'm a bit wiser and I thought I would give it a go. So, guess what I did this weekend?
Jar #4 — 1/2 cup Soft Pastry Wheat Berries, 1 cup waterJar #5 — 1 1/2 cup oat groats, 3 cups waterJar #6 — 1 cup split peas, 2 cups water
The things I wanted to learn:1 How was it to sprout in a glass Mason Jar with 6 x 8 piece of cheesecloth? It worked fine.2 How long does it take for watched sprouts to sprout? Not long, they sprout really quick.3 How much many cups dry do you get sprouted. Approximately, double in size.
Sprouting Grains 1 Place grains in a mason jar. Add 2-3 times as much water. Soak overnight or at least 8-12 hours.
2 Drain the soaking water. Rinse thoroughly with water and drain.3 Set at a 45-degree angle out of direct sunlight and at room temperature.4 Rinse and drain 3-4 times a day.
5 Continue to rinse and drain until the tails are the length of the grain. Approximately 12-24 hours after first soaking. COMING on Monday — Essene Breads
